Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Very lean beef
Provides the main meaty flavour and the body of the stock.
Veal knuckle
Adds gelatin and richness, giving the soup more body.
Sweet almonds
Pounded into the soup to thicken it and add a nutty, creamy texture.
Rich cream
Adds fat and smoothness, rounding out the soup's texture and flavour.

The step that matters

Refrigerate the soup overnight to remove the fat. Fat that is not chilled and skimmed will float on the surface and make the soup greasy. Cooling lets the fat solidify so it can be lifted off before the cream and almonds are added.

Swap the white pepper
