Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Turtle Soup

Ingredients

Directions

  1. Pound the spices very finely.

  2. Thicken the mixture with 2 whole eggs and 1 egg yolk.

  3. Test firmness by dropping a bit into boiling water; if not firm, add another yolk.

  4. Mix chopped parsley into half of the forcemeat for variety.

  5. Let the mixture cool, then form into balls the size of an egg yolk.

  6. Poach the balls in boiling water and add them to the turtle soup.

  7. Before serving, mix cayenne with lemon juice and add to the soup.

  8. Prepare the soup a day in advance and heat it in a water bath without boiling.

  9. For turtle fins, parboil, skin, and stew in turtle sauce with port wine, cayenne, salt, lemon juice, and thicken with butter and flour.
