What each ingredient does

Skate
The main protein; its flesh turns firm and flaky as it cooks in the sauce.
Butter
Adds richness and gives the skate a light golden browning in the pan.
Flour
Thickens the strained broth into a smooth, body-rich sauce when cooked with butter.
Hot vinegar
Adds sharp acidity that brightens and balances the richness of the sauce.

The step that matters

Boil the sauce and add the skate pieces for 5 minutes. Skate cooks quickly and becomes dry and tough if overcooked. Adding it to already boiling sauce for only 5 minutes keeps the flesh tender and moist.
