Another Way to Stew Beef

Ingredients

Directions

Cure the beef

  1. Pound and mix Jamaica pepper, black pepper, ginger, and coarse sea salt.

  2. Rub the mixture into the beef and let it sit for 5-6 days, turning daily.

Stew

  1. Place a flat plate in a saucepan, add the beef, cover with water, and stew for 5 hours, keeping the pan covered.

  2. If water reduces, add more boiling water.

Finish and serve

  1. Before serving, remove about 1 quart of gravy, skim it, and add grated nutmeg and cut pickles; heat and pour over the beef.

  2. Garnish with cut pickles.

What each ingredient does

Beef
Long, slow stewing breaks down tough connective tissue, leaving the meat tender and moist.
Jamaica pepper
Adds a warm, clove-like aroma that flavours the beef through the cure.
Black pepper
Adds sharp, pungent heat that seasons the meat during curing.
Ginger
Adds a fresh, spicy aroma that balances the rich beef.
Gravy
Provides moisture and body for the sauce poured over the beef.
Pickles
Add acidity that cuts through the richness of the beef and gravy.

The step that matters

Keep the pan covered and top up with boiling water. A covered pan slows evaporation, so the liquid stays level. Adding boiling water rather than cold keeps the simmer steady. Cold water would cool the pot and stall the breakdown of the connective tissue, leaving the meat less tender.

Swap the ginger

How well each one fits the dish's main ingredients (pepper, beef, nutmeg):

  1. Cinnamonfits better
  2. Marjoramfits better
  3. Allspicefits better
  4. Gingerthe original
