Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the main meaty body and structure of the sausage.
Beef suet
Adds fat that keeps the sausage moist and carries flavour during frying.
Stale bread
Absorbs moisture and helps bind the mixture so it holds its shape.
Egg yolks
Act as a binder that helps hold the minced mixture together.

The step that matters

Pounding until very fine. If the meat and suet are not finely minced and pounded, the mixture stays coarse and crumbly and will not bind evenly into rolls. Thorough breaking down spreads fat and protein evenly, giving a smoother, cohesive texture.

Swap the sage

How well each one fits the dish's main ingredients (pork, beef, bread, pepper, egg):

  1. Marjoramfits about as well
  2. Parsleyfits about as well
  3. Nutmegfits about as well
  4. Sagethe original

Fit is the average pairing score against pork, beef, bread, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
