What each ingredient does

Bread crumbs
Absorb the liquids and give the pudding body so it holds together when set.
Fresh suet
Adds fat that keeps the pudding moist and rich as it cooks.
Egg yolks
Bind the mixture and help it set firm when boiled.
Egg whites
Add lightness and help the pudding set with a tender structure.
Cream
Adds moisture and richness, softening the texture of the pudding.
Currants
Add sweetness and chewy bursts of fruit throughout the pudding.

The step that matters

Boil the mixture in a cloth until set. Boiling gently sets the egg proteins and binders into a firm pudding. Too vigorous a boil or too long can make the texture rubbery or cause the cloth to leak, so keep the water at a steady simmer.

Swap the currant
