What each ingredient does

Fresh strawberries
Provide the main flavor and the juice that forms the jelly.
Powdered sugar
Adds sweetness and helps draw flavor out of the strawberries.
Isinglass
Gelatin-like setting agent that firms the liquid into a jelly as it cools.

The step that matters

Skim the dissolved isinglass before cooling. Skimming removes foam and impurities so the jelly sets clear and smooth rather than cloudy or speckled. Isinglass sets as it cools, so the mixture should be poured while still liquid and before it firms.
