What each ingredient does

Small button mushrooms
Form the main body of the pickle, absorbing the spiced vinegar as they soften slightly.
Vinegar
Provides the acidity that preserves the mushrooms and gives the pickle its sharp flavor.
White pepper
Adds warm, sharp spice that infuses into the vinegar.
Allspice
Contributes warm, aromatic clove-like notes to the pickling liquid.
Mace
Adds a delicate, warm aroma that flavors the vinegar.

The step that matters

Boil the mushrooms before pickling. Boiling in fresh cold water for the full 8-10 minutes softens the mushrooms and drives off raw, earthy flavors, so they absorb the vinegar evenly and keep a good texture in the jar.

Swap the white pepper
