Gooseberry Wine to Resemble Champagne
Ingredients
Directions
Select gooseberries that are full grown but not ripe, preferably those with the least flavor when ripe.
Separate the smallest gooseberries using a sieve, discarding unsound or bruised fruit.
Remove the remains of blossoms and fruit-stalks.
In a clean tub that holds 15-20 gallons, bruise the gooseberries.
Add cream of tartar to promote fermentation.
