What each ingredient does

Milk
Curdles with the acidic lemon juice, clarifying the punch into a smoother, paler liquid.
Lemon rinds
Steeping in brandy extracts aromatic oils from the peel for fragrance and flavour.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Brandy
Serves as the spirit base that extracts flavour and carries the punch.

The step that matters

Adding the hot milk. Milk must be boiled and added to the acidic mixture so it curdles and can then be clarified. Adding it cold or unevenly can leave the punch cloudy with unwanted curds.
