What each ingredient does

Calf's head
Provides the meat and gelatin that give the soup its body and rich texture.
Flour
Thickens the gravy as its starch swells with heat and butter.
Butter
Adds richness and carries flavour, and helps smooth the flour into the gravy.
White wine or ketchup
Adds acidity and savoury depth that brightens the seasoned gravy.

The step that matters

Heat gently until the meat is thoroughly hot but not boiling. Boiling again can toughen the meat and cloud the gravy, so gentle heat keeps the meat tender and the soup clear.
