Lobster Sauce

Ingredients

Directions

Prepare

  1. Remove the spawn from under the tail of a live hen lobster and pound it in a mortar with the salt.

  2. Chop the white meat of the boiled lobster into very small pieces.

Make the sauce

  1. Melt the butter until it is not too thick, then stir in the pounded spawn and chopped lobster meat until well mixed and the butter turns a fine red.

  2. Keep the mixture simmering until it is hot enough to almost boil, then pour it into a sauce tureen and serve immediately.

  3. Do not let it boil or stand in the saucepan to preserve the flavor and color.

What each ingredient does

Lobster spawn
Gives the butter its rich flavor and fine red color.
White meat from boiled lobster
Adds the main lobster flavor and tender texture to the sauce.
Melted butter
Carries the spawn and meat and gives the sauce its smooth, rich body.

The step that matters

Keep the mixture from boiling. Boiling can cause the butter to separate and the delicate lobster flavor and fine red color to fade, so the sauce should be heated only until nearly boiling and served right away.
