Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Dredge the chicken joints lightly with flour and season with white pepper, salt, nutmeg, and cayenne.

Assemble

  1. In a pie dish, place the forcemeat balls and halved hard-boiled eggs.

  2. Lay the chicken pieces on top, along with the ham or bacon slices.

  3. Add the water and white gravy.

  4. Cover with puff pastry and bake at 400°F (200°C) for about 1 hour and 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the pie and provides the savoury meat filling.
Flour
Light coating on the chicken that helps the surface brown and thickens the juices slightly.
Eggs
Hard-boiled halves add firm texture and richness to the filling.
Ham or bacon
Adds salty, savoury flavour that seasons the filling.
White gravy
Adds moisture and body to the filling so it does not dry out in the oven.
Puff pastry
Forms a flaky, golden crust that seals and browns over the filling.
