What each ingredient does

Bones, trimmings, and gristles
Release gelatin and meaty flavor into the liquid as they simmer, setting the sauce to a jelly.
Onions
Add savory sweetness and aroma to the stock during the long simmer.
Mushroom ketchup
Adds deep savory umami flavor to the finished jelly.

The step that matters

Strain and cool the gravy fully before removing the fat. Chilling lets fat solidify on the surface so it lifts off cleanly, while the gelatin sets the liquid into a firm jelly. Removing the fat while warm leaves the sauce greasy and loose.
