What each ingredient does

Curry powder
Supplies the main spice flavour and aroma of the dish.
Flour
Thickens the sauce as it cooks with the butter and liquid.
Butter
Carries the spices and adds richness to the sauce.
Cream
Adds body and a mild, smooth richness to the sauce.
Lemon juice
Adds acidity that brightens the finished curry.

The step that matters

Simmering the meat in water. Long, gentle simmering breaks down the meat's connective tissue so it becomes tender. A hard boil can toughen the meat and reduce the liquid too quickly, so keep it at a gentle simmer and check the thickness.
