Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Partridges
- Provide the main meat and flavour of the soup as they stew.
- Mutton shanks
- Release gelatin and savoury flavour into the broth during long gentle stewing.
- Onions
- Browning in butter builds sweetness and savoury depth in the base.
- Ham
- Adds salty, smoky meat flavour to the broth.
- Butter
- Carries the frying step and helps the vegetables and meat brown richly.
The step that matters
Fry without burning. Browning in butter builds deep flavour, but scorched fat and solids turn bitter and carry that taste into the whole broth, so stop once golden.
