Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the bulk of the paste, and its protein thickens as it cooks and is pounded.
Water
Adds moisture to cook the chicken and loosens the pounded meat into a smooth paste.

The step that matters

Boil gently for a few minutes until desired thickness is reached.. Vigorous boiling toughens and tightens the proteins, which can make the paste grainy and rubbery. A gentle simmer thickens it evenly and keeps it smooth.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, meat, lemon):

  1. Thymefits better
  2. Rosemaryfits better
  3. Marjoramfits better
  4. Nutmegthe original

Fit is the average pairing score against chicken, meat, lemon. Candidates are from the same food group and used in at least 100 recipes.
