What each ingredient does
- Fresh ground coffee
- Provides the main coffee flavour and aroma as hot water extracts its soluble compounds.
- Isinglass
- Acts as a fining agent, gathering fine grounds so they settle and the coffee clears.
- Boiling water
- Extracts flavour from the grounds and keeps the brew hot during steeping.
The step that matters
Adding the isinglass and boiling water. Isinglass must be dissolved evenly into the hot coffee so it can bind the fine grounds. If it is unevenly mixed, pockets stay cloudy and grounds fail to settle, leaving the coffee murky.
