Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the liquid into a smooth, body-rich sauce as it cooks.
Butter
Carries flavour from the aromatics and adds richness to the sauce.
Cream
Adds richness and a smooth, silky texture to the finished sauce.
Broth
Forms the main liquid that gives the sauce its savoury base.
Bacon or ham
Adds smoky, salty depth to the flavour base.

The step that matters

Bring to a boil while stirring constantly. Flour needs to be fully hydrated and heated while stirred, or it can form lumps and leave the sauce with a raw, floury taste and uneven thickness.

Fit is the average pairing score against veal, ham, butter, onion, mushroom, thyme, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
