Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Large-flap mushrooms
- Release their liquid under salt, forming the base of the ketchup.
- Sea salt
- Draws water out of the mushrooms and helps preserve the liquid.
- Shallots
- Add savoury depth and aromatic flavour to the liquid.
- Garlic
- Contributes pungent aromatic flavour that mellows during boiling.
- Horseradish
- Adds sharp, pungent heat that is added again at the reboiling stage.
The step that matters
Boiling and skimming the spiced liquid. Boiling concentrates the liquid and reduces its water content, while skimming removes foam and impurities that would spoil flavour and shorten storage life.
Swap the mace
How well each one fits the dish's main ingredients (mushroom, shallot, clove, garlic, pepper, ginger, horseradish):
- Turmericfits better
- Thymefits better
- Allspicefits better
- Macethe original
