Ingredients

Directions

  1. Boil water with the lard and dripping or butter until hot.

  2. Mix in enough flour to form a stiff paste, kneading until smooth.

  3. Soak a lump of the paste in a cloth or under a pan until near cold.

  4. Roll out the paste to the desired thickness and cut out the top and bottom of the pie, plus a long piece for the sides.

  5. Cement the bottom to the sides with egg, pinching them together.

  6. Fill the pie, place the cover on, and pinch the edges together.

  7. If using a tin form, butter it before adding the paste, then bake after filling and covering.

  8. Remove the tin carefully when done, and return to the oven for 15 minutes if the sides are too light.

  9. Brush the top with egg using a feather.
