To Keep Gooseberries
Ingredients
Directions
Gather gooseberries before they become too large, taking care not to cut them off.
Fill wide-mouthed bottles with the gooseberries and loosely cork them.
Submerge the bottles up to the neck in boiling water until the fruit looks scalded.
Remove the bottles, let them cool completely, then cork tightly and seal the tops with rosin.
Dig a trench in a less-used part of the garden deep enough to hold the bottles, covering them with a foot and a half of earth.
In frost, add fresh stable litter to prevent the ground from hardening.
