Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken breasts
Provides the main body of the filling, holding its shape once cooked and cooled.
Béchamel sauce
Binds the chopped filling together and adds moisture so it stays soft inside the pastry.
Puff pastry
Forms the flaky outer shell that puffs and crisps when fried.
Ham
Adds savoury, salty flavour to the filling.
Shallots
Add a mild, sweet onion-like aroma to the filling.

The step that matters

Cool the filling before wrapping. A warm, wet filling softens the raw pastry and can make it tear or leak, so the pastry may not puff evenly in the hot lard. Letting the mixture cool first keeps the layers intact.

Swap the mace

How well each one fits the dish's main ingredients (chicken, ham, anchovy, parsley, lemon, shallot, pepper):

  1. Thymefits better
  2. Capersfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chicken, ham, anchovy, parsley, lemon, shallot, pepper. Candidates are from the same food group and used in at least 100 recipes.
