Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rib of beef
Main cut that becomes tender and flavourful as it pickles and simmers.
Vinegar
Acidity that softens the meat and carries the pickling flavour through it.
White wine
Adds moisture and mild acidity during the long simmer.
Garlic
Adds aroma and pungency that penetrate the meat during pickling.

The step that matters

Turning the beef daily and topping up vinegar. Over two weeks the vinegar must cover and evenly reach the meat; turning keeps every side in contact with the liquid so the pickling is even and the surface does not dry or spoil.
