Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 400°F (200°C).
Lay puff pastry at the bottom of a deep dish.
Put forcemeat around the sides of the dish.
Layer sweetbreads, artichoke bottoms, cocks' combs, truffles, morels, asparagus tops, fresh mushrooms, hard-boiled egg yolks, and forcemeat balls in the dish.
Season with pepper and coarse sea salt.
Almost fill the pie with water, cover, and bake for 2 hours.
After baking, pour in rich veal gravy thickened with cream and flour.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
