Chicken or Rabbit Pie
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 400°F (200°C).
Cover the bottom of a dish with puff pastry and line the sides with a thin layer of forcemeat.
Season the chicken pieces with coarse sea salt and black pepper, then place some in the dish.
Add sweetbreads, truffles, morels, and artichoke bottoms on top of the chicken.
Sprinkle the chopped hard-boiled egg yolks over the filling.
Add a little water and cover the pie with more pastry.
Bake in the oven until golden brown.
Once baked, pour in rich gravy thickened with flour and butter.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
