Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal Cutlets Grilles with Mushrooms

Ingredients

Directions

  1. Coat the veal cutlets in bread crumbs.

  2. Broil the cutlets as directed.

  3. In a pan, stew the mushrooms in butter for a few minutes until nearly done.

  4. Add the beef stock and brown sauce to the mushrooms and let it reduce gently until moderately thick.

  5. When ready to serve, squeeze in a little lemon juice and a small amount of cayenne pepper, if desired.

  6. Stir the sauce well and pour it in the center of the cutlets, avoiding pouring it over the breaded cutlets.
