Mince Veal in a Timbale
Ingredients
Directions
The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare minced veal as directed in the first recipe for minces and keep it warm.
Fry plain pancakes without sugar or lemon peel.
Butter a round or oval mold and place one pancake at the bottom and around the sides.
Spread the remaining pancakes with minced veal, roll them up, and place them tightly in the mold.
Cover with another pancake.
Half an hour before serving, place the mold in a gentle oven at 300°F (150°C).
When ready, turn out onto a dish and add a little strong gravy at the bottom.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
