Ingredients

Directions

  1. Blanch the lettuces well and drain them on a sieve for a few minutes.

  2. Rub the drained lettuces through a sieve with a wooden spoon and let it sit for 1 to 2 hours to remove excess water.

  3. In a stewpan, melt the butter and stir until it begins to fry.

  4. Add the consommé and reduce it well.

  5. Stir in the béchamel sauce and bring to a boil.

  6. If desired, add a little salt, then remove from heat.

  7. In a bowl, mix the egg yolk and cream, then pour it onto a warm dish.

  8. Lay the prepared tendons over the lettuce purée.
