Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked chicken
Provides the main filling and savory flavor of the croquettes.
Béchamel sauce
Binds the chicken together and keeps the filling moist and creamy.
Eggs
Act as a binder and coating that helps the bread crumbs adhere.
Bread crumbs
Form a crisp, golden outer crust when fried.

The step that matters

Let the mixture cool completely. A warm, soft filling is hard to shape and may loosen or burst during frying. Chilling firms the béchamel so the balls hold their shape and coating.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, sauce, egg, bread):

  1. Capersfits better
  2. Garlicfits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, sauce, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
