Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sorrel
Provides the sharp, lemony acidity and green flavour that defines the sauce.
Butter
Adds fat and smooth richness, helping the sorrel soften and carry flavour.
Consommé
Adds savoury depth and liquid to loosen the puréed sorrel.
Cream sauce
Adds body and creaminess, mellowing the sorrel's sharpness.

The step that matters

Cooking the sorrel gently in a covered pan. Sorrel turns dull brown and loses its bright green colour and fresh flavour if overheated. Gentle, covered cooking softens it in its own moisture, preserving colour and keeping the purée smooth.

Swap the sorrel

How well each one fits the dish's main ingredients (butter, cream, sauce):

  1. Capersfits about as well
