What each ingredient does

Carp or tench
Forms the main body of the dish, cooked gently until flaky and tender.
Madeira wine
Adds depth and a sweet, fortified flavour to the cooking liquid.
Consommé
Provides a savoury meat-based liquid that flavours the fish as it stews.
Sauce tournee
Thickens the cooking liquid into a smooth, body-rich sauce.
Lemon juice
Adds acidity that brightens the sauce and balances the wine's richness.

The step that matters

Stew gently over low heat. Fish protein sets and toughens quickly at high heat, so a gentle simmer keeps the flesh moist and tender and prevents it from breaking apart.
