Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browning in butter builds a sweet, deep flavour as the sauce reduces.
Consommé
Provides savoury liquid that reduces into the body of the sauce.
Sauce tournée
Thickens the liquid and gives the sauce body and a rich texture.
Butter
Adds richness and a smooth finish to the sauce.

The step that matters

Simmer until reduced by half. Reducing concentrates flavour and thickens the liquid. Stopping too early leaves the sauce thin and bland, while overcooking can make it too salty or sticky once seasoned.

Swap the lemon
