Chesnuts Stewed

Ingredients

Directions

Prepare the chestnuts

  1. Nick a small piece of skin off each chestnut.

  2. In a saucepan, shake the chestnuts with butter over the fire until the rind and inner skin come off.

Stew and finish

  1. Add the chestnuts to simmer gently in consommé, tossing occasionally to avoid breaking them.

  2. When nearly dry, add sauce à l'espagnole and simmer gently for a short time.

  3. If the sauce is too thick, add a little consommé and salt to taste, along with stewed mushrooms.

  4. Serve with roasted turkey or stewed beef.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Provide the starchy, mildly sweet body of the dish once simmered until tender.
Butter
Adds richness and helps loosen the rind and inner skin when shaken in the pan.
Consommé
Liquid that simmers the chestnuts, adding savoury flavour and keeping them moist.
Sauce à l'espagnole
Thickens the cooking liquid and adds a rich, savoury flavour to the chestnuts.

The step that matters

Tossing the chestnuts while they simmer. Gentle tossing keeps the chestnuts moving so they cook evenly without sticking, while avoiding vigorous stirring that would break their soft, starchy flesh apart.
