Raised Pie to Be Served Hot

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix stiff paste with warm water until well blended.

  2. Roll out the paste thinly and cut pieces for the bottom and sides of the dish.

  3. Egg the edges of the pieces to be joined and press them together firmly.

  4. Shape and garnish the pie with leaves or festoons as desired.

  5. Fill the pie nearly to the top with bran, egg the top, and bake in a moderate oven at 350°F (175°C).

  6. Once baked to a light color, turn out the bran and prepare to fill with your choice of filling.
