Why it works: Beef and pork match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,690 recipes. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓
Sea Pie
Ingredients
Directions
In a large bowl, combine the salt beef, pickled pork, veal, mutton, duck, onions, and potatoes. Season with pepper and coarse sea salt.
Make a paste by mixing the chopped beef suet, flour, water, and a little salt. Knead well.
Roll out the paste and lay it over a well-buttered large basin.
Add the meat and vegetable mixture into the basin and cover with another layer of paste.
Tie the basin with a cloth and boil for five hours.
Once done, turn the pie out onto a large dish and pour in some good gravy.
