Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Grease a shallow copper pan with dripping.

  3. Prepare a batter similar to pancake batter, but slightly thicker.

  4. Place the pan under the meat in the oven until the pudding is done and well browned.

  5. For extra browning, place the pudding over a stove for a few minutes.

  6. Sprinkle with coarse sea salt, cut into squares, and serve.
