Apricots

Ingredients

Directions

  1. Cut the apricots in half and peel them neatly.

  2. In a pot, bring water to a boil and prepare another pot with boiling syrup.

  3. Place a few apricots at a time in the boiling water until slightly tender, then drain them.

  4. Transfer the apricots to the boiling syrup and let them boil gently for 10 minutes.

  5. Place the apricots in a flat-bottomed earthen pan and cover with paper.

  6. Boil the syrup a little longer, then pour it over the apricots.

  7. The next day, boil the apricots for 5 minutes and carefully return them to the pan.

  8. Boil the syrup for the next 4 or 5 days and pour it over the apricots each time.

  9. On the sixth day, place the apricots in pots and top with apple jelly and brandy paper.

  10. Ensure the pots are dry and the apricots are not overly ripe.
