Green Gooseberries
Ingredients
Directions
Scald the gooseberries, being careful not to boil them.
Place them in a large pan and let them stand for three days.
Drain the liquid and put the gooseberries in another pan with water and a little syrup.
Heat them until warm, but do not boil.
The next day, strain the liquid and place the gooseberries in an earthen pan.
Pour thin boiling hot syrup over them.
Repeat this process for six days, reducing the syrup to thicken it.
Finally, put the gooseberries in pots and tie them up when cold.
