Red Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Remove the outer leaves from the cabbage and shred it finely.

  2. Place the shredded cabbage in a dish and sprinkle with coarse sea salt.

  3. Let it stand for two days to draw out moisture.

  4. Drain the cabbage in a colander and transfer it to a jar.

Make the pickling liquor

  1. In a pot, combine enough white wine vinegar to cover the cabbage, cloves, mace, and horseradish; bring to a boil.

  2. Once cooled, pour the vinegar mixture over the cabbage.

  3. For added flavor, include a few slices of beetroot.

  4. Seal the jar with a bladder.

What each ingredient does

Red cabbage
Forms the crisp, fibrous body of the pickle that holds its texture under brine.
Coarse sea salt
Draws moisture out of the shredded cabbage, concentrating it and softening its structure.
White wine vinegar
Provides the acidity that preserves the cabbage and gives the pickle its sharp flavour.
Horseradish
Adds a pungent, sharp aroma that mellows as the pickle sits.

The step that matters

Drain the cabbage after salting. Salting for two days draws out a lot of water. Draining well before adding the hot vinegar keeps the vinegar from being diluted and helps the cabbage stay crisp rather than soggy.

Swap the beetroot

The recipe marks beetroot as optional. How well each one fits the dish's main ingredients (cabbage, white wine, vinegar, clove, mace, horseradish):

  1. Mustardfits better
  2. Shallotfits better
