French Macaroons

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Finely grind the almonds in a mortar, moistening with beaten egg whites to prevent oiling.

  2. Mix the ground almonds with the powdered sugar.

  3. Add more beaten egg whites until the mixture can easily drop from a spoon.

Bake and serve

  1. Line baking sheets with paper, then drop the mixture onto the paper without letting them run together.

  2. Bake in a 400°F (200°C) oven until lightly browned, then let cool before removing the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the macaroons.
Egg whites
Bind the ground almonds and sugar into a soft mixture that holds its shape.
Powdered sugar
Adds sweetness and helps the macaroons dry and brown on the surface.

The step that matters

Adding the egg whites. Too little egg white leaves a crumbly mixture that will not hold together, while too much makes it runny and causes the drops to spread. Add them gradually until the mixture drops easily from a spoon.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
