Why it works: Clove and allspice match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Walnuts
Ingredients
Directions
Prepare a strong brine with salt and water that can float an egg. Boil and skim it well.
Pour the brine over the walnuts and let them stand for six days.
Make a new brine as before, drain the walnuts, and place them in it for one week.
Drain and dry the walnuts with a cloth.
Boil enough vinegar to cover the walnuts with mace, cloves, nutmeg, allspice, bruised ginger, horseradish, and Jamaica peppercorns.
Pour the hot vinegar over the walnuts and seal the jar tightly.
Let the walnuts sit for six months before using.
