Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. In a saucepan, mix flour with milk and a little butter.

  2. Boil the mixture, stirring constantly, until it thickens.

  3. Allow to cool slightly, then add butter, sugar, and egg yolks.

Bake and serve

  1. Beat the egg whites until frothy and fold them into the mixture.

  2. Pour into a buttered mold and bake at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the milk into a stable base that holds the pudding's shape.
Egg yolks
Enrich the base and help it set firm as it bakes.
Egg whites
Whipped to froth, they lighten the pudding and help it rise in the oven.
Milk
Forms the liquid base that the flour thickens and the eggs set.
Butter
Adds richness and a smooth, tender texture to the pudding.

The step that matters

Folding in the egg whites. Whites hold air only when whipped to froth and gently folded in; stirring vigorously deflates them, leaving a denser pudding with less rise.
