Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Thicken the custard and add richness as they set with gentle heat.
- Isinglass
- Gelatin-like setting agent that firms the custard as it cools.
- Cream
- Provides fat and body, giving the custard a smooth, rich texture.
- Fine chocolate
- Supplies the chocolate flavour and deep colour of the custard.
The step that matters
Stir over gentle heat until thickened. Egg yolks thicken through gentle heat; too much heat scrambles them into lumps, so keep the heat low and stir constantly.
