What each ingredient does

Heavy cream
Whipped to trap air, forming the light, thick body of the dessert.
Isinglass
A gelatin-like setting agent that firms the whipped cream so it holds its shape when chilled.
Powdered sugar
Adds sweetness and dissolves easily into the cream without leaving grainy texture.

The step that matters

Mixing in the isinglass. Isinglass must be fully dissolved before it goes into the cream, or it sets in lumps and the dessert will be uneven. Mixing it thoroughly into the whipped cream spreads it evenly so the whole mold sets firm.

Swap the red currant

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
