What each ingredient does

Gooseberries
The fruit itself, which is softened and candied by repeated soaking in sugar syrup.
Sugar
Sweetens the fruit and draws out moisture, forming the syrup that preserves it.

The step that matters

Repeating the syrup process. Sugar slowly replaces the water in the fruit over several days of gentle heating and resting. Heating too hard or stopping early can leave the fruit wet or prone to spoiling.
