Why it works: Broccoli and potato match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 910 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Boiling Meat

Ingredients

Directions

Prepare the head

  1. Wrap the calf's head in a muslin rag and boil for 15 minutes.

  2. Remove the brains, discard the sage leaves, and chop the brains.

Make the brain sauce

  1. In a saucepan, combine the chopped brains, parsley, butter, and a pinch of salt.

  2. Warm the mixture over low heat, stirring gently to avoid boiling or burning.

Plate and serve

  1. Cut off the roots of the boiled tongue, skin it, and place it in the center of a small dish.

  2. Arrange the brains around the tongue.

  3. Serve with either a knuckle of ham, boiled tongue, or pickled pork, along with vegetables and potatoes.

  4. Save the cooking liquid for soup or for braising the cold head.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's head
Forms the main body of the dish and is the source of the brains.
Butter
Adds richness and a smooth, silky texture to the brain mixture.
Parsley
Adds fresh, herbal aroma that lightens the richness of the brains.
Boiled tongue
Serves as the centerpiece of the dish, presented with the brains around it.

The step that matters

Warming the brain mixture. Over high heat or boiling, the butter and brains can separate, scorch and turn grainy. Gentle low heat with slow stirring keeps the mixture smooth and prevents burning.

Swap the broccoli

How well each one fits the dish's main ingredients (parsley, butter, ham, pork, potato):
