Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the gravy as it cooks with the fat and liquid.
Butter
Adds richness and fat that blends with the flour to form the base.
Ketchup
Adds sweetness and acidity for a tangy, rounded flavour.

The step that matters

Keep stirring until the sauce boils for 1-2 minutes. Flour needs to reach a boil and cook for a short time to lose its raw starch taste and to reach full thickness. Stopping early leaves a pasty, floury gravy.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, flour, ketchup, pepper, horseradish):

  1. Capersfits better
  2. Parsleythe original
  3. Turmericfits about as well
  4. Allspicefits about as well

Fit is the average pairing score against butter, flour, ketchup, pepper, horseradish. Candidates are from the same food group and used in at least 100 recipes.
