What each ingredient does

Beef leg or shin
Breaks down into tender meat and releases gelatin and flavor into the broth during long simmering.
Cold water
Forms the broth; starting cold lets scum rise gradually so it can be skimmed off as the liquid heats.
Onions
Add savory sweetness and aroma to the broth as they soften during simmering.
Carrots
Add natural sweetness and body to the broth as they cook down.
Celery
Adds a fresh, aromatic vegetable flavor that deepens during the long simmer.

The step that matters

Skimming the scum as the water heats. Scum is coagulated proteins and impurities that rise to the surface as the broth approaches a boil. Removing it before it re-mixes keeps the soup clear and clean-tasting.
