Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken or old fowl
Provides the meat and collagen-rich body that flavours and thickens the broth as it simmers.
Celery
Adds aromatic flavour to the broth during the long simmer.
Parsley
Contributes fresh, herbal aroma to the simmering broth.

The step that matters

Remove the scum as it comes to a boil. Scum is coagulated protein and impurities; skimming it early keeps the broth clear and clean-tasting rather than cloudy or bitter.
